With my time off from drama school, baking is usually my go-to pass time. Me and my younger brother will always have baking days, and since we were little uns, has always been something we enjoy doing together. That's why over Easter, we decided to try these sandwich biscuits, taken from the traditional Italian Baci Di Dama (Also known as Lady's Kisses). This recipe was super easy to use, and they were super simple to make vegan - Only having to substitute the butter, and changing the filling to ol' faithful Biscoff Biscuit Spread, but of course you could use other spreads like Nutella or jam. The biscuits themselves are also just as delicious by themselves, with their crispy outside and sweet, almond taste. This recipe will surely stay with me because of it's simplicity, and creates great tasting treats, perfect for bakers of all ages to try for themselves.
I N G R E D I E N T S :
120 g Vegan Butter
120 g Caster Sugar
1 tsp Vanilla Extract
120 g Ground Almonds
120 g Plain Flour
Lotus Biscoff Biscuit Spread
M E T H O D :
1. Preheat oven to 180° and line a large baking tray with greaseproof paper.
2. In a bowl, beat the butter and sugar together until light and creamy, add the vanilla extract and beat again.
3. Add the ground almonds and flour and mix gently, being careful not to let the flour fly everywhere, until it forms a dough.
4. When dividing the dough, split into equal sized quarters, and then divide those quarters into five individual biscuits.
5. With floured hands, roll each biscuit into a small ball and place onto your prepped baking tray. Then press down slightly with the palm of your hand, making sure to leave a 3 cm gap between each biscuit.
6. Bake for 15 mins until golden and then leave to cool before sandwiching.
7. Feel free to dust with icing sugar and then fill with the biscuit spread.
